Roasted Root Vegetables

Try this yummy vegetable dish as a healthy alternative for your Thanksgiving meal.

2 yams or sweet potatoes, peeled and cut to 1 inch cubes
4 medium carrots, peeled and sliced into 1 inch pieces
2 medium onions, sliced into large sections
2 medium beets, peeled and cut to 1 inch cubes
2 medium potatoes, peeled and cut into 1 inch cubes
1.5 Tbsp olive oil
Himalayan salt (to taste)

Place cut up vegetables in a plastic bag. Drizzle olive oil over top. Mix well. Turn on to a cookie sheet. Bake in a 400 oven for 40-50 minutes until the vegetables are tender.  Salt to taste.
