Paleo Trail-Mix Muffins

These muffins are perfect when you want something simple, nourishing, and ready to grab. With all the goodness of trail mix, they’re an ideal fit for busy mornings or those in-between meal times when you’re looking for a healthy snack alternative.

 

Ingredients

  • 1 large apple, cored

  • 1 large carrot, peeled

  • 2 large pasture-raised organic eggs

  • ¼ cup extra-virgin olive oil

  • 2 tablespoons maple syrup

  • 2 cups almond flour

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • 2 tablespoons ground flaxseed

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon kosher salt

  • ⅓ cup raw pumpkin seeds

  • ⅓ cup raw sunflower seeds

  • ½ cup dried cherries or cranberries

Method 

Preheat the oven to 350°F. Line a standard 12-cup muffin tin with paper liners.

Bake for 25 to 28 minutes, until the muffins are puffed and golden. Allow to cool completely before serving.

Store leftover muffins in an airtight container in the refrigerator for up to 1 week.
