Sweet Potato Chips

From the FIXATE Cookbook 

Serves: 4

Container Equivalents: ½ Yellow, ½ tsp oil

2 medium sweet potatoes, peeled, very thinly sliced – I used a mandolin

2 tsp extra virgin organic coconut oil (or olive oil) melted

¼ tsp sea salt (or Himalayan salt)

  1. Preheat oven to 200°

  2. Line two large baking sheets with parchment paper

  3. Place sweet potatoes on baking sheets in a shingle layer

  4. Brush with oil; sprinkle with salt

  5. Bake for 2-3 hours
