Eat your Greens
Not long ago, many people wouldn't have even considered eating Swiss chard. In fact, some may not have known what it was. Today, however, it has become one of the most popular and nutritious greens for those looking to add more healthy foods to their diet.
Ingredients:
1 bunch of Swiss Chard
2 Tbsp Olive Oil
2 Cloves of garlic, finely chopped
1/3 cup raisins
2 Tbsp balsamic vinegar
1/4 cup pine nuts or cashews
Instructions:
Wash Swiss Chard — shake off extra water. do not dry.
Trim off stems and chop into 1/2 inch pieces, set aside. Chop leaves into 1 inch slices.
Place oil in a skillet over medium heat. Toss in garlic and Swiss chard stems. Sauté until the stems start to soften slightly.
Turn in leaves, cover to steam. Once wilted and slightly softened, stir in raisins and pine nuts. Cook for another minute or two.
Drizzle and stir in the Balsamic vinegar. Serve warm.
